Kale, carrot and spelt pilaf: Rich in fibre delicious one-pot wonder

Indulgent and rich in fibre and vitamins this delightful Kale, carrot and spelt pilaf recipe is a perfect no fuss dinner. Seamlessly blending the earthy richness of spelt with the vibrant orange and green of kale and carrots, the result is a nutritious and satisfying meal – that also cuts down on the washing up (isn’t one-pan cooking wonderful?). With a fusion of aromatic spices and a burst of natural sweetness from sultanas, this pilaf elevates simple flavours into a captivating dish.

  • 1 tbsp vegetable oil
  • 1 Red onion, chopped
  • 2 carrots, sliced
  • 1 tbsp curry powder
  • 250g spelt
  • 800ml vegetable stock
  • 50g sultanas
  • 250g bag kale

Heat the oil in a large saucepan and sauté the onion and carrots for 5 minutes, allowing their flavours to combine and develop.

Introduce the curry powder to the mix and gently fry for 1 minute, allowing it to release the seductive aromas of its spices.

Add the nutty spelt grains into the pan and toss to coat them with the spice-infused oil.

Pour in the vegetable stock and toss in the sultanas, creating a symphony of textures and tastes.

Bring the pan to a gentle boil, then lower the heat and let the pilaf simmer for 15 minutes, occasionally stirring to ensure the mix is catching on the base of the pan.

As the liquid in the pilaf reduces and the flavours intensify, throw in the kale leaves and cover with a tight lid to allow them to wilt on a gentle simmer for 5 minutes.

This is a ‘vanilla’ version of what is possible with these ingredients. However, you know better than anyone what your taste threshold can cope with – if you like more spice, now is the time to personalise your creation. Season the pilaf to your taste preferences and add some finely chopped chilli or sprinkle with fresh pomegranate seeds.

Serve immediately and garnish with chopped coriander for visual theatre and aromatic appeal.
