
With most of the country baking in the summer heat and more forecast for the weekend. Here’s a delicious raspberry and pomegranate mocktail that will help refresh and keep you hydrated. And what’s best? It is alcohol free so if you are minded to share it with envious grandchildren, you can.

Ingredients
- 50g caster sugar
- 200g raspberries
- 100g pomegranate seeds
- 2 lime, one grated zest and juice plus one lime cut into 8 wedges
- 1 handful fresh mint leaves
- 1 litre soda water
Raspberry and pomegranate mocktail method
Place the caster sugar in a small saucepan with 50ml of water and heat gently until the sugar has dissolved. Add 150g of the raspberries and 75g of the pomegranate seeds and heat gently until the fruit is softened and collapsed and you have a thickened syrup. Pour through a sieve into a jug and stir in the lime juice and zest and leave to cool.
Fill 4 tall glasses with ice adding a few raspberries and some pomegranate seeds in-between the ice. Pour in the raspberry and pomegranate juice about a third up the glass and then top with soda water and stir. Add lime wedges, sprigs of mint and extra berries and seeds to decorate.
